    List of Ingredients




    30 g Peeled ginger root - 1 oz
    5 ml Peppercorns - 1 t
    500 ml Water - 1 pt
    500 ml More water - 1 pt
    500 g Sugar - 18 oz
    12 Limes juice of
    1 l Water or sparkling water - 1 qt

    makes 2 qt or 2 L

    Recipe



    Make a paste of the ginger. Add this paste and the peppercorns to 500 mL water. Bring to a boil, reduce heat, simmer 5 min. Strain. Set liquid aside and put solids back in the pan with more water. Bring to a boil, reduce heat, simmer 5 min. Strain. Discard solids. Combine both liquids together with sugar and lime juice. Chill.

    To serve, dilute with an equal quantity of still or sparkling water and serve over ice.
