    Amish Buttermilk Biscuits

    List of Ingredients

    3 cup Flour
    1/4 cup Instant lowfat dry milk
    1 tbl Baking powder
    2 tbl Sugar
    1 tsp Salt
    2 tsp Cream of tartar
    1/2 cup Cold butter in pieces
    1/2 cup Cold lard
    14 tbl Cold buttermilk

    Recipe

    * Pulse the dry ingredients with the butter and lard until grainy, NOT blended! Add the cold buttermilk, and mix until the dough comes together.
    * Place dough on a floured cloth or marble slab, and knead a few times with floured hands. (Keep the dough cold!) Pat or roll out to 3/4-inch thick, and cut out biscuit rounds or shapes. (You can use a cookie cutter!)
    * These biscuits can be frozen ahead, or baked immediately.
    * Baking Time: Bake at 400 degrees F for 13-15 minutes if fresh, and 15-18 minutes if frozen.
