MIX:
8 cups flour
3 tablespoons + 1 tsp. baking powder
2 teaspoons salt
2 tablespoons sugar
1 1/2 cups shortening
Sift first 4 ingredients together in large bowl. Cut in shortening with pastry blender until mixture resembles coarse meal. Store flour mixture in large airtight container in fridge for up to 4 weeks. Makes about 10 cups.

QUICK BISCUITS:
2 cup refrigerator biscuit mix
1/2 cup milk (or for fluffier biscuits, 1/2 tsp baking soda dissolved into 1/2 c. buttermilk)
Preheat oven to 475F. Combine biscuit mix and milk, stirring with a fork just until dry ingredients are moistened. Turn dough out onto a lightly floured surface and knead lightly 10-12 times or until dough is no longer sticky. Roll or pat dough to 1/2" thickness; cut with a floured 2-inch biscuit cutter. Place biscuits on a lightly greased large baking sheet, leaving 1 inch of space between biscuits. Bake for 8-10 minutes or until lightly browned. Makes about 1 dozen biscuits.
