2 cups flour (Lily brand)
1 tablespoon sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 stick unsalted butter OR 3 tbl. shortening
1 cup buttermilk (1 to 1 1/8)
2 tablespoons lightly salted butter, melted
Recipe
Preheat oven to 475F. Grease an 8 inch round cake pan. In a medium bowl, mix together 1 1/2 cups of flour, sugar, baking powder, baking soda, and salt. Cut in shortening, or work with fingers until lumps are no larger than small peas. Stir in milk until dough is wet, let stand 2 to 3 minutes. Dough will be very wet. Pour remaining flour onto rolling board. Flour hands. Using an ice cream scoop, scoop about two tablespoons of dough into flour. Pick up dough and gently shape into a soft round by passing back and forth in hands. Place into prepared pan, repeat. Brush tops with melted butter. Bake in preheated oven for 16 to 18 minutes. Makes 10.
