Potato Buttermilk Biscuits

Pre-heat oven to 425°
Combine:
2 cups flour (whole wheat, whole spelt, or all-purpose)
2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. salt
With a pastry blender, blend into flour
Mix1/4 cup butter and then1 cup mashed potatoes until mixture resembles coarse crumbs. Add3/4 cup buttermilk (or milk with 1 tsp. lemon juice added)
Blend quickly until dough forms a ball. Knead about 30 seconds and pat out 3/4" thick. Cut out with a 2 1/2" round cutter and bake 10 to 12 minutes.
