Cheddar-Jalapeno Cornbread

List of Ingredients
1 cup yellow cornmeal
1/2 cup allpurpose flour
1 1/2 tsp double acting baking powder
3/4 tsp baking soda
3/4 tsp salt
1 cup grated sharp Cheddar
1 fresh or pickled jalapeno pepper seeded & minced
2 lrg eggs
1 cup buttermilk
1/2 stk unsalted butter
(1/4 cup)* melted & cooled

* For a lower fat version you can substitute applesauce
* Whisk cornmeal, flour, baking powder & soda, salt in bowl, add cheddar & jalapeno & toss well -In another bowl, whisk together eggs, buttermilk, & butter ,add egg mixture to cornmeal & stir just until combined -Spread in greased 8" square baking pan, bake at 350 for 25-30 mins, let cool 5 minutes
