    Feta Cumin Corn Bread

    List of Ingredients

    1-1/2 cups cornmeal
    1 cup all-purpose flour
    2 teaspoons baking powder
    1/2 teaspoon baking soda
    1 teaspoon salt
    2 teaspoons ground cumin
    8 ounces feta cheese, crumbled
    1 cup thinly sliced green onions
    2 eggs
    1 cup milk
    2 tablespoons sugar
    1/4 cup vegetable oil

    Recipe

    Preheat oven to 350°F.  Spray an 8x8-inch baking pan with non-stick vegetable spray. In a large mixing bowl, combine cornmeal, flour, baking powder, baking soda, salt, and cumin.  Add the feta cheese and green onions; toss to mix well. In a medium bowl, combine eggs, milk, sugar, and oil; whisk until well blended.  Add to cornmeal mixture, stirring until just combined.  Pour into prepared baking pan. Bake 45 to 50 minutes or until tester inserted in the center comes out clean.
