    Pumpkin: Almond Pumpkin Muffins w/ Streusel

    List of Ingredients

    1/3 cup butter or margarine
    1 cup firmly packed brown sugar
    1/3 cup molasses
    1 egg
    1 cup pumpkin
    1 cup oat bran
    1 cup all-purpose flour
    1 tablespoon pumpkin pie spice
    1/2 teaspoon baking soda
    1/4 teaspoon baking powder
    1/4 teaspoon salt
    1/2 cup chopped almonds
    Streusel Topping (below)

    Recipe

    Preheat oven to 350�F.� Spray 12 muffin cups with non-stick vegetable spray. In a large mixing bowl, cream butter, sugar, and molasses until light and fluffy.� Add egg and pumpkin, beating until well blended.� Add flour, baking soda, baking powder, and salt, stirring until just moistened.� Stir in almonds.� Fill muffin cups three-fourths full.� Sprinkle Streusel Topping over each muffin. Bake 35 to 40 minutes or until a tester inserted in the center comes out clean.� Serve warm.

    STREUSEL TOPPING
    1/4 cup sugar
    1/2 teaspoon ground cinnamon
    2 tablespoons all-purpose flour
    1 tablespoon butter or margarine
    In a small bowl, combine all ingredients, mixing until crumbly.
