Apple Dumpling Muffins

2 cups flour
1 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground mace
1/4 teaspoon ground cardamom
1/8 teaspoon ground cloves
1/4 cup oil
4 tablespoons butter or margarine melted
2 eggs
3/4 cup milk
2 apples peeled, cored and cut into slices Recipe
Preheat the oven to 350 degrees. Line each cup of a standard muffin pan with strips of baking parchment paper (paper muffin liners can also be used). Sift together the flour, sugar, baking powder, salt, cinnamon, mace, cardamom and cloves. Make a well in the
center of the flour mixture. By hand, mix in the oil, butter, eggs and milk. Then fold in the sliced apples. Spoon the batter into the prepared muffin pan. Bake in the preheated oven for 30 to 35 minutes or until done. (Makes twelve 2-to-4-ounce muffins or six 6-to-8-ounce muffins).
