Rhubarb: Apple Rhubarb Muffins

1/2 cup sugar
2 teaspoons cinnamon
2 cups flour
1 cup whole wheat flour
2 teaspoons cinnamon
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 1/3 cups packed brown sugar
1 1/3 cups applesauce
1/2 cup oil
1 1/2 cups rhubarb, chopped
Recipe
Preheat oven to 350ºF and grease muffin cups. Mix 1/2 cup sugar with first 2 tsp cinnamon and set aside. In large mixing bowl, stir together the flours, the second 2 tsp cinnamon, baking powder, baking soda, and salt. Make a well in center of dry ingredients. In medium bowl, combine eggs, brown sugar, applesauce and oil. Pour into flour mixture and stir just till ingredients are moistened; batter will be lumpy. Fold in chopped rhubarb. Spoon batter into greased muffin cups, filling nearly full. LIghtly sprinkle cinnamon sugar mix on top (don't need to use it all). Bake muffins for 30-35 minutes, serve warm with butter. Makes 16 muffins.
