    Apricot: Apricot White Chocolate Muffins

    List of Ingredients

    2 cups flour
    1/3 cup brown sugar
    1/3 cup sugar
    2 tablespoons baking powder
    1/4 teaspoon salt
    1 cup dried apricots, snipped
    3/4 cup walnuts, chopped
    3/4 cup vanilla chips or white chocolate chunks
    2/3 cup milk
    1/2 cup butter or margarine, melted
    2 eggs, beaten
    1 1/2 teaspoons vanilla

    Recipe

    Preheat oven to 350ºF. Line muffin pan with paper liners or spray with nonstick cooking spray. In medium bowl, combine the flour, brown sugar, sugar, baking powder, salt, apricots, walnuts and white chocolate. In separate bowl, mix together milk, melted butter, beaten eggs and vanilla. Add the milk mixture to the flour mixture, stirring until moistened. Spoon batter into muffin cups and bake for 20-25 minutes. Makes 14-15 medium muffins.
