Banana: Banana Pistachio Muffins

1 1/2 cups flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1/8 teaspoon nutmeg
3 ripe bananas, mashed
1/2 cup sugar
1/3 cup brown sugar, packed
1/2 cup butter, melted
1/4 cup milk
1 egg
1 cup shelled pistachio nuts
1 cup coconut
Recipe
Preheat oven to 350ºF, grease muffin cups. Combine flour, baking soda, salt and nutmeg in a bowl. In separate bowl, mix together the mashed bananas, sugar, brown sugar, butter, milk and egg. Mix the banana mixture into the flour mixture, then fold in the nuts. Spoon batter into 12 greased muffin cups; sprinkle with coconut. Bake for about 25 minutes. Remove from oven and serve warm with butter. Makes 12 muffins.
