Banana: Banana Walnut Whole Wheat Muffins

1 cup wheat flour
1 cup flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup margarine or butter, softened
1/2 cup sugar
2 eggs
3 ripe bananas, mashed
1/4 cup milk
1 teaspoon vanilla
1 cup walnuts, coarsely chopped
Recipe
Preheat oven to 375ºF. Grease muffin cups. In large bowl, stir together the flours, baking soda, baking powder and salt. In separate bowl, cream the butter and sugar; beat in eggs. Stir in the mashed banana, milk and vanilla. Gently stir banana mixture into flour mixture; stir in walnuts. Spoon batter into prepared muffin cups. Bake for 25 minutes, or til toothpick inserted in middle comes out clean. Makes 12 muffins.
