Bran: Mill Cottage Bran Muffins

Mill Cottage Bed and Breakfast
List of Ingredients
2 1/2 cups all purpose flour
2 cups sugar
2 1/2 tsps baking soda
1 tsp salt
1 Tbsp cinnamon
1/2 tsp nutmeg
3 1/2 cup Post Premium Raisin Bran cereal
2 large eggs beaten lightly
2 cups buttermilk well shaken
1/2 cup canola oil
1/2 cup raisins Recipe
Preheat oven to 400°F. Sift flour, sugar, soda, salt, cinnamon, nutmeg and then stir in the bran flakes. Add eggs, buttermilk, oil, raisins, stirring only until well combines. Fill each muffin cup about 3/4 full and bake for 20 to 25 minutes, until a toothpick tester comes out clean.
Note: Batter will keep for up to one week in the refrigerator.
