    Bran: Carrot Bran Muffins

    List of Ingredients

    2 cups wheat bran
    4 eggs
    1 1/2 cups oil
    1 1/2 cups brown sugar
    1/4 cup molasses
    3 cups carrots, grated
    1 cup raisins
    1 cup nuts, chopped (any type)
    3 cups flour
    1 teaspoon baking soda
    1/2 tablespoon baking powder
    3/4 teaspoon salt
    1 tablespoon cinnamon

    Recipe

    Preheat oven to 350ºF. Line muffin pan with paper liners and spray top of pan with nonstick cooking spray. In large bowl, combine the bran, eggs, oil, brown sugar, molasses and grated carrot. Add the raisins and nuts. In separate bowl, combine the flour baking soda, baking powder, salt and cinnamon. Add flour mix to bran-carrot mixture, stirring by hand until just moistened. Fill muffin cups to heaping. Bake for 25 minutes until golden brown on top and toothpick inserted in middle comes out clean. Makes 12 to 13 large muffins.
