Cranberry: Cinnamon Cranberry & Orange Muffins

2 tablespoons oil
3/4 cup buttermilk
1/2 cup sugar
1 egg
2 tablespoons grated orange peel
3/4 cup all bran cereal
1 cup whole wheat flour
1 teaspoon cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 cup fresh or frozen cranberries, cut in half
Recipe
In the large bowl of an electric mixer, beat together oil, buttermilk, sugar, egg and orange peel until mixture is blended. Stir together the dry ingredients (except for fruit) and add all at once, beating just until blended. Stir in cranberries. Divide batter between 12 paper lined muffin cups. Bake at 400ºF for 20 minutes or until toothpick comes out clean. Yields 12 muffins. Can substitute 1 cup chopped peaches or apricots for the cranberries if desired.
