Cinnamon Honey Buttermilk Muffins

3/4 cup unprocessed bran
1 cup low-fat buttermilk
1 egg, beaten
1/4 cup honey
1/4 cup vegetable oil
1/2 cup raisins
1/2 cup grated carrots
1 1/4 cup sifted all-purpose flour
1 tsp baking soda
1/4 tsp salt
1 tsp nutmeg
1/2 tsp cinnamon Recipe
1.Preheat oven to 425 degrees. Coat muffin pan with nonstick spray.
2.In medium bowl, combine bran, buttermilk, egg, honey, oil, raisins and carrots. Let stand 10 minutes.
3.In large bowl, sift together remaining ingredients.
4.Make well in center and add bran mixture. Stir just until dry ingredients are moistened. Batter should be lumpy. Do not over-mix.
5.Spoon batter evenly into 12 muffin pans.
6.Bake 15 to 20 minutes or until tester comes out clean when inserted in center of muffin.
Makes 12 muffins. These muffins can be frozen. When cool, put in a freezer bag.
