Coconut: Coconut Muffins

List of Ingredients
2 cups flour
1 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
8 tablespoons margarine, melted and cooled
2 eggs, lightly beaten
8 ounces plain yogurt
1/2 teaspoon coconut extract
3 ounces sweetened grated coconut
1/2 cup chocolate chips, optional
Recipe
Preheat oven to 375ºF; grease muffin cups. In large bowl, mix the flour, sugar, baking powder, and salt. Set aside. In separate bowl, mix the melted margarine, eggs, yogurt, coconut extract, and grated coconut. Add the margarine mixture to flour mixture; stir in chocolate chips. Spoon into muffin cups. Bake for about 18 minutes or till done. Makes 12 muffins.
