Coffee Nut Muffins

3 tablespoons butter or margarine
2/3 cup strong coffee
1/4 cup firmly packed brown sugar
1-1/2 cups self-rising flour
1 cup chopped pecans
1 egg, lightly beaten Recipe
Preheat oven to 375°F. Spray 12 muffin cups with non-stick vegetable spray. In a small saucepan, combine butter, coffee, and brown sugar. Heat until butter melts; set aside. In a large mixing bowl, combine flour and pecans; add butter mixture, beating until well blended. Stir egg into batter. Spoon batter into prepared muffin cups, filling half full. Bake 20 minutes or until tester inserted in center comes out clean. Serve warm.
