    Corn: Country Corn Muffins

    1 1/4 cups cornmeal
    3/4 cup flour
    1 tablespoon + 1 tsp. baking powder
    3/4 teaspoon salt
    1 tablespoon sugar
    2 large eggs, lightly beaten
    1 cup milk
    1/4 cup oil

    Recipe

    Combine cornmeal, flour, baking powder, salt and sugar in a large bowl. Combine eggs, milk and oil; add to cornmeal mixture, stirring until dry ingredients are moistened. Spoon batter into greased muffin pans, filling 2/3 full. Bake at 425ºF for 12-15 minutes or until muffins are golden. Remove from pans immediately. Makes 1 dozen.
