Craisin Chocolate Chip Muffins

3/4 cup sugar
8 ounces lowfat ricotta cheese
2 cups oat bran or rice flour
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon orange rind, grated
1 cup orange juice
1 cup dried cranberries
1/2 cup chocolate chips
1/2 cup pecans, chopped
1/4 cup sugar + 1 tsp cinnamon for toppingRecipe
Preheat oven to 375ºF. Line muffin pan with paper liners or spray with nonstick cooking spray. In mixing bowl, beat sugar and ricotta cheese. In separate bowl, sift oat bran or rice flour, baking soda, baking powder, salt, and grated orange rind together. Alternately add the flour mixture and the orange juice to sugar and cheese. Fold in cranberry, chocolate chips and chopped pecans. Using an ice cream scoop, spoon the batter into muffin cups. Make a topping by mixing cinnamon and sugar; sprinkle onto top of muffins. Bake for 20 minutes or till golden brown. Makes 12 muffins.
