    Chocolate: Double Chocolate Muffins

    List of Ingredients

    1/2 cup orange juice
    1/3 cup water
    3 tablespoons oil
    1 tablespoon vinegar
    1 teaspoon vanilla
    1 1/2 cups flour
    1/2 cup sugar
    1/4 cup cocoa
    1 teaspoon baking soda
    1/4 teaspoon salt
    1/3 cup mini chocolate chips

    Recipe

    Preheat oven to 375ºF. Line muffin pan with paper liners. In large bowl, whisk together orange juice, water, oil, vinegar and vanilla. In separate bowl, mix the flour, sugar, cocoa, baking soda and salt. Stir the flour mixture into the juice mixture, just until all ingredients are moist. Fold in the chips. Fill muffin cups 3/4 full. Bake for 12 minutes or until toothpick inserted in middle comes out clean. Remove muffin tray and cool on rack for several minutes. Sprinkle tops with powdered sugar before serving the muffins warm. Makes 10-12 muffins.
