    Oat Bran: Fruit Oat Bran Muffins

    List of Ingredients

    1/2 cup wheat bran
    1 cup plain yogurt or buttermilk
    2 egg whites
    2 tablespoons olive oil
    2 tablespoons honey
    1 1/2 cups oat bran
    1/4 cup lecithin granules (optional)
    2 teaspoons baking powder
    1/2 teaspoon baking soda
    1 teaspoon cinnamon
    1 tablespoon grated orange peel
    1/4 teaspoon nutmeg, ground cloves and ginger
    1/4 cup chopped prunes
    1/2 cup raisins or currants
    2 tablespoons sunflower seeds
    1/4 cup chopped walnuts

    Recipe

    Preheat oven to 400ºF. In small bowl, combine wheat bran with yogurt. Set aside. In mixing bowl or food processor, blend together whites, oil and honey. Add the bran mixture. In another bowl, mix together oat bran, lecithin granules, baking powder and soda, and spices. Add the oat bran mixture to processor, mix to combine (don't overmix). Stir in dried fruits, seeds and nuts. Spray muffin tin with nonstick spray. Spoon batter into cups and bake for 15-20 minutes or til done. Makes 12 muffins.
