Pear: Ginger Pear Muffins

2 cups flour
1/2 cup packed brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground ginger
1/8 teaspoon cloves and nutmeg
1 cup plain yogurt
1/2 cup oil
3 tablespoons molasses
1 egg, beaten
1 1/2 cups fresh pears, unpeeled and diced
1/2 cup raisins
1/2 cup nuts, chopped
Recipe
Preheat oven to 400ºF. Line muffin pan with paper liners or spray with nonstick cooking spray. Mix flour, brown sugar, baking soda, salt, ginger, cloves and nutmeg together in large bowl. In separate bowl, mix yogurt, oil, molasses and egg. Fold the yogurt mixture into flour mixture, mixing just until dry ingredients are moistened. Stir in pears, raisins and nuts. Spoon batter into muffin cups 2/3 full. Bake for 20 minutes. Makes 12-18 muffins.
