    List of Ingredients




    1/2 cup flour
    1/4 cup sugar
    1/4 cup brown sugar packed
    2 teaspoons baking powder
    1/4 teaspoon salt
    1 teaspoon cinnamon
    1 egg
    1/2 cup butter, melted
    1/2 cup milk
    1 1/2 cups fresh raspberries

    TOPPING:
    1 teaspoon dark rum
    3 teaspoons fresh lime juice
    1 tablespoon powdered sugar
    1/2 cup walnuts, chopped
    1/2 cup dark brown sugar
    1 teaspoon cinnamon
    1/4 cup flour
    2 tablespoons butter, melted

    Preheat oven to 350ºF; line muffin pan with paper liners. Combine flour, sugar, brown sugar, baking powder, salt and cinnamon in a bowl. After mixing well, make a depression in middle of the bowl. Add the egg, melted butter and milk in the well. Stir until just combined. Fold in the raspberries. Fill each muffin cup about 3/4 full.

    To make the topping, combine the rum, lime juice and powdered sugar into a syrupy liquid. Spoon the mixture evenly over the batter in each muffin cup. Mix the chopped nuts, brown sugar, cinnamon, and flour in a small bowl until well blended. Pour the melted butter over nut mixture and stir. Add 1 spoonful or so over the batter in each muffin cup. Bake for 25 minutes. To make glaze, combine 1/2 c. powdered sugar and 3 tbl. lime juice. Pour over muffins at serving time. Makes 12 muffins.
