    Strawberry: Grandmother's Strawberry Muffins

    List of Ingredients

    1/2 cup butter or margarine softened
    1 cup sugar
    1 teaspoon vanilla extract
    1 tablespoon lemon juice
    3 eggs
    2 cups flour
    1/2 teaspoon salt
    3/4 teaspoon cream of tartar
    1/2 teaspoon baking soda
    1/2 cup nonfat sour cream
    1 cup fresh or frozen strawberries, pureed

    FROSTING:
    1 cup powdered sugar
    1 teaspoon vanilla
    2 teaspoons milk
    1 tablespoon lemon zest

    Recipe

    Preheat oven to 350ºF; grease muffin cups. With electric mixer, beat softened butter, sugar, vanilla and lemon juice until fluffy Add the eggs, 1 at a time. In a separate bowl, sift together the flour, salt, cream of tartar, and baking soda. In another bowl, mix the sour cream with strawberry puree. Alternately fold the flour mixture and strawberry mixture into the egg mixture. Fill greased muffin cups 3/4 full. Bake for 20-25 minutes. Combine powdered sugar, vanilla, milk and lemon zest to make frosting; drizzle on cooled muffins. Makes 18 muffins.
