List of Ingredients
2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg, freshly ground
1 egg
1/2 cup oil
1/3 cup milk
1 container peach yogurt (8 ounce)
3/4 cup dried fruit, chopped
TOPPING:
3 tablespoons flour
2 tablespoons brown sugar
3 tablespoons nuts, chopped
1/2 teaspoon cinnamon
2 tablespoons butter, softenedRecipe
The night before, mix together dry ingredients, then mix the topping in separate bowl. Preheat oven to 400�F. Lightly grease muffin cups. In medium bowl, beat the egg; add the oil, milk, yogurt and dried fruit, and combine. Add the egg mixture to the dry ingredients, stirring gently just until moistened; do not overbeat. Fill muffin cups 2/3 full, and spoon 1 heaping tablespoon of topping over the batter. Bake for 20 minutes, checking at 15 minutes. Makes 12 muffins.
