    Banana: Hazelnut Chocolate Chunk Banana Muffins

    2 cups flour
    1 1/2 teaspoons baking powder
    1/4 teaspoon baking soda
    1/4 teaspoon salt
    1/2 cup unsalted butter, room temperature
    1/2 cup sugar
    2 large eggs, room temperature
    1 cup mashed ripe bananas (3 large)
    1/3 cup milk, room temperature
    1 1/2 teaspoons vanilla
    9 ounces bittersweet chocolate with hazelnut
    cut into 1/2" pieces

    Recipe

    Preheat ovent o 375ºF. Lightly butter 12 mufin cups and the edges surrounding the cups. In a large bowl, stir together flour, baking powder, baking soda and salt. In another bowl, using a hand-held electric mixer, cream butter and sugar for 1-2 minutes, until light and fluffy. Beat in eggs. Stir in bananas, milk and vanilla (mixture will look curdled). Add flour mixture and stir just to combine. Stir in chocolate chunks. Spoon batter into prepared muffin cups; bake for 20-25 minutes or until cake tester inserted in center of a muffin comes out clean. Remove muffin tins to wire rack. Cool for 5 minutes before removing muffins from tins; finish cooling on rack. Serve warm, or cool completely and store airtight at room temperature. Freezes well. Makes 12.
