    Lemon: Lemon Love Note Muffins

    List of Ingredients

    2 1/2 cups flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    1/4 cup fructose or table sugar
    1/2 cup egg whites or egg substitute
    1 1/4 cups nonfat yogurt
    1/4 cup unsalted butter, softened
    1 teaspoon lemon extract
    1 tablespoon fresh grated lemon rind
    1 tablespoon pure vanilla extract

    GLAZE:
    1/2 cup powdered sugar
    1/2 cup fresh lemon juice

    Recipe

    Preheat oven to 350ºF. Line 12 muffin cups with paper liners. In a large bowl, sift together flour, baking soda, baking powder and set aside. In a large bowl, beat together sugar, egg whites, yogurt, butter, lemon extract, lemon peel and vanilla with an electric mixer until light. Add flour mixture to yogurt mixture and stir until incorporated. Spoon batter into prepared muffin cups. Bake 25-35 minutes or until wooden pick inserted into muffin centers comes out clean. Meanwhile, make glaze while muffins are baking: In a small bowl, stir together sugar and lemon juice. Drizzle glaze over warm muffins. Turn out onto wire rack to cool muffins.
