Banana: Lowfat Banana Oatmeal Muffins

1 1/4 cups whole wheat flour
3/4 cup quick cooking rolled oats
2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 cup frozen unsweetened apple juice concentrate -- thawed
1 large egg white
2 medium ripe bananas, mashed (1c.)
Recipe
Combine flour, oats, baking powder, and baking soda. Combine apple juice concentrate, egg white and mashed bananas; add to the dry ingredients. Stir until just moistened. Gently stir in raisins Spray muffin pan with nonstick vegetable coating. Pour batter into muffin tin. Bake at 400ºF for 15 minutes. Yield: 12 muffins.
