    Banana: Lowfat Banana Oatmeal Muffins

    List of Ingredients

    1 1/4 cups whole wheat flour
    3/4 cup quick cooking rolled oats
    2 teaspoons baking powder
    1/4 teaspoon baking soda
    3/4 cup frozen unsweetened apple juice concentrate -- thawed
    1 large egg white
    2 medium ripe bananas, mashed (1c.)

    Recipe

    Combine flour, oats, baking powder, and baking soda. Combine apple juice concentrate, egg white and mashed bananas; add to the dry ingredients. Stir until just moistened. Gently stir in raisins Spray muffin pan with nonstick vegetable coating. Pour batter into muffin tin. Bake at 400�F for 15 minutes. Yield: 12 muffins.
