Bran: Lowfat Honey Bran Muffins

2 cups all bran cereal
1/3 cup honey
1 1/4 cups skim milk
1 egg
1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
Recipe
Combine the cereal, honey, and milk, and let stand for 2 minutes. Add the egg, beating well. Stir together the flour, baking soda, and salt; add to the cereal mixture, stirring only until combined. Portion the batter evenly into lightly greased 2 1/2-inch muffin-pan cups. Bake at 400ºF for 25 minutes or until a toothpick inserted in the center of a muffin comes out clean. Let stand about 5 minutes before removing from pans. Serve immediately. Makes 12 muffins.
