    Apple: Lowfat Oatmeal Apple Squares

    List of Ingredients

    1 cup butter buds liquid or 1 c. Promise Ultra -- fat free margarine
    1 cup firmly packed brown sugar or 1/2c. brown -- sugar+2 tsp sweet n
    1/2 cup egg beaters® 99% egg substitute
    1/3 cup apple juice
    2 teaspoons vanilla
    1 1/2 cups whole wheat or white flour
    2 teaspoons cinnamon
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/4 teaspoon nutmeg
    4 cups quick oats (not instant or old fashion)
    2 cups peeled and diced green apples
    1/2 cup raisins
    1 cup granulated sugar (or 1/2c sugar + 6 pkts -- sweet n low)

    Recipe

    Heat oven to 350ºF. Spray Pam on 15x10 pan. Combine liquid Butter Buds, brown sugar and granulated sugar in large bowl. Beat at medium speed until well blended. Beat in egg beaters, apple juice, and vanilla. Combine flour, cinnamon, baking powder, baking soda and nutmeg. Mix into creamed mixture at low speed until blended. Stir in oats, apples, and raisins with spoon. Spread in pan. Bake at 350ºF for 30-35 minutes or until browned and toothpick comes out clean. Cool in pan on cooling rack. Makes 4 doz. Can also bake as muffins for 15 minutes at 425ºF. Muffins can be stored in freezer.
