Corn: Maple Corn Muffins

2 cups flour
1/4 cup packed light brown sugar
1 cup yellow cornmeal
1 cup milk
1 tablespoon baking powder
1/3 cup maple syrup
3/4 teaspoon salt
3/4 stick butter, melted
2 eggs
Recipe
Mix flour, cornmeal, baking powder and salt in a large bowl. Whisk eggs and sugar in another bowl until smooth. Add milk and syrup and whisk. Pour over dry ingredients and add 4 T of the melted butter. Fold until moistened. Fill muffin cups and bake 25-30 mins. at 350ºF. Brush tops with remaining 2 T of butter.
