Bran: My Best Bran Muffins

List of Ingredients
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups wheat bran
1/3 cup brown sugar
1/4 cup molasses
2 large egg whites
1 cup buttermilk or plain yogurt
Recipe
Can refrigerate up to 1 week, freeze up to 6 mos. Heat oven to 500ºF In large bowl, sift together flour, baking soda, baking powder and salt. Stir in bran with fork. In another large mixing bowl, beat together brown sugar, molasses, egg whites and buttermilk. Add dry ingredients to liquids and stir just to moisten, about 30 seconds. Fill each cup in a 6 cup muffin tin 3/4 full, and place in oven. Reduce heat to 400 deg. and bake until toothpick inserted in center of muffin comes out clean, 35 minutes. Let tin cool on rack for 10 minutes before removing muffins. Let muffins cool completely on rack. Seal inside ziplock bag and refrigerate or freeze.
