Oat Bran Muffins

1 cup oat bran
1 cup whole wheat flour
1/2 cup dark brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup nonfat buttermilk or plain nonfat yogurt
3 large egg whitesRecipe
Heat oven to 500ºF. In mixing bowl, combine oat bran, flour, brown sugar, baking powder, and baking soda using a fork. In separate bowl, beat together the buttermilk and egg whites until well combined. Pour the wet mixture into the flour mixture, and stir until the flour is thoroughly moistened, but still lumpy, about 30 seconds. Fill the cups of a 6-cup muffin tin 3/4 full.
Place the tin in the oven, and as you shut the door, lower the temp to 400ºF. Bake until golden brown, about 25 minutes. or until toothpick inserted in center of muffin comes out clean. Let tin cool on cooling rack 10 minutes before removing muffins. To store, let muffins cool completely on rack. Seal inside ziplock bag and refrigerate 3 days, or freeze up to 6 months.
