    Blueberry: Oatmeal Blueberry Muffins

    List of Ingredients

    1 cup + 2 Tbl. flour
    6 ounces quick-cooking oats
    1/3 cup + 1 Tbl. sugar -- divided
    1 tablespoon baking powder
    1/2 teaspoon salt
    1 cup lowfat 1% milk
    1 egg
    1/4 cup apple sauce
    1 cup blueberries
    1 teaspoon cinnamon

    Recipe

    Preheat oven to 425ºF. Line 12 muffin pans with cups. Mix flour, oats, 1/3 cup sugar, and the baking powder and salt.In another bowl, combine egg, milk, and applesauce. Mix well with a fork. Stir wet contents into dry until well blended. Fold in blueberries. Combine remaining sugar and cinnamon. Sprinkle the muffins before baking. Cooking time: 20-25 minutes or until toothpick comes out clean.
