    Orange: Orange Blossom Muffins

    List of Ingredients

    1 cup butter, softened
    1/4 cup orange marmalade
    1 large orange
    1/2 cup butter, melted
    1 large egg, lightly beaten
    2 cups flour
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    3/4 cup sugar

    Recipe

    Preheat oven to 400ºF. beat softened butter at medium speed of an electric mixer until creamy. Add marmalade; beat just until blended. Cover and chill marmalade mixture until ready to serve with muffins. Coarsely grate orange rind. Remove white pith and seeds from orange; discard. Using kitchen shears, finely chop orange into a bowl; stir in grated rind, melted butter and egg.

    Combine flour and remaining 4 ingredients in a large bowl; make a well in center of mixture. Add orange mixture to flour mixture, stirring just until dry ingredients are moistened. Spoon batter into greased muffin pans, filling 2/3 full. Bake for 15-20 minutes or until muffins are golden. Remove from pans immediately. Serve warm muffins with marmalade mixture. Makes 1 dozen.
