Orange: Orange Nut Muffins

3/4 cup orange juice
1 egg, beaten
1/4 cup canola oil
2 cups flour
1/2 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
grated rind of 1 orange
1/2 cup pecans, chopped
Recipe
Preheat oven to 375ºF. Spray muffin cups with nonstick cooking spray. In a large bowl, combine orange juice, egg and oil. In a separate bowl, sift the flour, sugar, baking powder and salt together. Combine with orange juice mixture just until moist, then stir in orange rind and pecans. Be careful not to overmix; the batter will be lumpy. Spoon batter into muffin cups. Bake for 25 minutes or till top is firm. Makes 12 muffins.
CRANBERRY WALNUT MUFFINS: Substitute milk for orange juice. Add 1/2 bag of fresh, chopped cranberries and 1/2 c. chopped english walnuts to batter. Also add 1/2 tsp of nutmeg. Omit orange rind and chopped pecans.
APPLE RAISIN MUFFINS: Substitute milk for orange juice. Chop 1 apple in a food processor. Add 1/2 c. raisins to batter along with 1 tsp of cinnamon. Sprinkle chopped apple on top of muffin batter. Omit orange rind and chopped pecans.
