Pumpkin Apple Streusel Muffins

2 1/2 cups flour
2 cups sugar
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
2 egg
1 cup canned pumpkin
1/2 cup oil
2 cups Mcintosh apples, chopped
TOPPING:
4 teaspoons butter
1/4 cup sugar
1/2 teaspoon cinnamonRecipe
Preheat oven to 350ºF and grease muffin cups. Combine flour, sugar, pie spice, baking soda and salt. In separate bowl, combine the eggs, pumpkin, oil and chopped apples; mix with flour mixture until just moistened. Scoop batter into greased muffin cups. To make topping, cut together butter, sugar and cinnamon until crumbly; top muffin batter evenly. Bake for 30-35 minutes. Makes 18 muffins.
