    1 cup canned pumpkin
    2/3 cup nonfat dry milk
    2 tablespoons pumpkin pie spice
    2 eggs
    6 tablespoons flour
    1 teaspoon baking soda
    1/2 cup carrot -- grated
    1 teaspoon vanilla
    1 teaspoon cinnamon
    4 packets Sweet 'n Low® sweetener

    Recipe



    Combine eggs and vanilla; add pumpkin. In separate bowl, combine dry ingredients; add to egg mix and beat with mixer. Stir in carrot. Pour into muffin pan that's been sprayed with nonstick spray. Bake 12-14 minutes at 350ºF.
