Raspberry: Raspberry Cornmeal Muffins

1 cup cornmeal
1 cup flour
1/2 teaspoon salt
1/2 cup packed brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 egg
1/4 cup butter, melted
1/2 cup buttermilk
1/2 cup orange juice
1 cup fresh or frozen raspberries -partly thawed
Recipe
Preheat oven to 400ºF; line muffin pan with paper liners and spray top of pan with nonstick cooking spray. Combine dry ingredients. In separate bowl, combine egg, butter, buttermilk and orange juice; beat well. Add the flour mix to egg mix, stirring just to combine. Add the berries, careful not to overmix. Fill muffin cups 3/4 full. Bake for 15-20 minutes. Makes 12 muffins.
