    Raspberry Cream Cheese Muffins

    2 cups all-purpose flour
    1 Tbsp baking powder
    2 Tbsp granulated sugar
    ½ tsp salt
    1 large egg
    1 cup milk
    ¼ cup vegetable oil
    1 8-oz package cream cheese, cut into 12 chunks
    28 to 32 raspberries

    Preheat oven to 425. Lightly grease or line with paper baking cups 12 2-/34 inch muffin cups. In a large bowl, blend together flour, baking powder, sugar and salt. In a small bowl, beat the egg until foamy. Beat in the milk and oil. Combine the two mixtures, blending until the dry ingredients are just moistened. Spoon 1 heaping tablespoon of batter into the muffin cups. Press a cube of cream cheese into the center of each and top with two raspberries. Spoon a second tablespoon of batter on top of the raspberries. Add one or two addition raspberries to the top of the muffin, if desired. Bake for 15 to 20 minutes. Cool for 5-7 minutes. Serve warm.
