Peach: Spicy Peach Muffins

List of Ingredients
2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 dash mace
1 egg
1/3 cup oil
1/3 cup milk
1 carton peach yogurt (8 ounce)
1/2 cup dried peaches, finely chopped
Topping: 2 tbl. sugar + 1/2 tsp cinnamon
Recipe
Preheat oven to 400ºF. Grease muffin cups. Combine flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg and mace in large bowl. In separate bowl, combine the egg, oil, milk, yogurt and dried fruit. Add the egg mixture to the flour mixture, stirring just until dry ingredients are moistened. To make topping, combine sugar and cinnamon. Spoon into greased muffin cups and sprinkle top of each muffin with topping. Bake for 20 minutes until toothpick inserted in middle comes out clean. Do not overbake. Makes 12 muffins.
