Strawberry: Strawberry Cream Cheese Muffins

1 1/4 cups sugar
4 teaspoons baking powder
1/2 teaspoon salt
4 ounces cream cheese, cut small cubes
1 pint strawberries, stem and quarter
4 eggs
1 1/4 cups milk
1/2 cup packed brown sugar
1/4 teaspoon nutmeg
1 teaspoon vanilla
2 ounces melted shortening
Recipe
Preheat oven to 350ºF. Sift together first four ingredients. Add berries and cream cheese to dry ingredients and toss to coat. In a separate bowl, whisk together remaining ingredients. Add to dry ingredients; mix until just blended. Divide into 24 muffins in greased tins or paper liners. Quarter reserved berries--top each muffin. Sprinkle with granulated sugar. Bake for 15 to 18 minutes.
