Strawberry: Strawberry Shortcake Muffins

6 cups flour
1 cup sugar
1 1/2 tablespoons baking soda
1 1/2 tablespoons baking powder
3 cups frozen strawberries, chopped (not thaw)
3 cups lowfat buttermilk
3 eggs + 3 egg whites
3 tablespoons oil
Recipe
Preheat oven to 350ºF; spray muffin cups with nonstick cooking spray. In large bowl, combine flour, sugar, baking powder and baking soda. Mix the frozen strawberries in with flour, stirring until berries are just coated. In separate bowl, combine buttermilk, eggs and whites, and oil. Combine with flower mixture, not overmixing. Fill each muffin cup about 3/4 full with batter, then sprinkle about 1/4 tsp of sugar on top of each. Bake for 15-20 minutes. Makes 36 muffins.
