    Amish Friendship Bread (& Variations) *

    List of Ingredients

    1 cup Amish friendship bread starter
    1 cup oil
    1/2 cup milk
    3 eggs
    1 teaspoon vanilla
    2 cups flour
    1 cup sugar
    1 1/2 teaspoons baking powder
    2 teaspoons cinnamon
    1/2 teaspoon salt and soda
    1 large box instant vanilla pudding

    Recipe

    Begin with 1 cup of starter...Mark day 1 on your calendar so you don't lose track.
    Day 1 & 2: do nothing
    Day 3: Stir with wooden spoon
    Day 4 & 5: do nothing
    Day 6: add 1 c. each milk, sugar and flour
    Day 7: do nothing
    Day 8: stir with a wooden spoon
    Day 9: do nothing
    Day 10: add 1 c. each milk, sugar and flour.

    Stir with wooden spoon and put into 3 one-cup containers. Keep one and give two away. Then do the following:Add the oil, 1/2 c. milk, eggs and vanilla to what's left in the bowl; mix well with wooden spoon. In another bowl, mix dry ingredients; add to liquid gradually, stirring.

    Pour into 2 loaf pans, greased and sprinkled with sugar and cinnamon. Sprinkle top of loaves with extra cinnamon and sugar. Bake for 1 hour at 325ºF. Note: if you dont use the batter to make bread at the end of the cycle, you can keep it by adding in one cup each of milk, sugar and flour, stirring well, and then removing 1 cup of batter for continued storage (discard the rest.)


    VARIATIONS:
    CINNAMON BREAD
    Remainder of Amish Batter
    1 c. oil
    4 eggs
    2 c. flour
    1 c. sugar
    3 t. cinnamon
    1/2 t. salt
    1 t. baking soda
    1 small box instant vanilla pudding
    1/2 c. raisins
    1/2 c. crushed nuts
    Preheat oven to 325 ºF. Mix Pour in 2 greased loaf pans. Bake 1 hour. Sprinkle cinnamon sugar on top when it comes out of oven.

    FRIENDSHIP FRUITED BREAD
    Remainder of Amish Batter
    2/3 c. oil
    3 eggs
    2 c. flour
    1 c. sugar
    1 t. cinnamon
    1/2 t. salt
    1/2 t. baking soda
    1 1/4 t. baking powder
    1 t. vanilla
    canned fruit or 2 c. diced apples or raisins
    Preheat oven to 350 ºF. Mix batter. Pour in 2 greased loaf pans. Bake for 50-60 minutes.

    CHOCOLATE CAKE
    Cream together: 2/3 c. shortening and 1 2/3 c. sugar. Add: 3 eggs, 1 c. Amish batter, and 1 t. vanilla. Beat 2 minutes on medium speed. Combine: 2/3 c. cocoa, 1 1/2 t. baking soda , 1 t. salt, 2 c. flour, and 1/2 t. baking powder. Add flour mixture to batter alternately with 3/4 c. cold water. Beat 1 minute on medium speed. Mix in by hand 1 c. chopped nuts. Pour into greased and floured 9x12 pan. Bake for 30 to 45 minutes.

    APPLE BREAD
    1 1/2 c. sugar
    3/4 c. oil
    1 t. vanilla
    2 c. flour
    2 t. cinnamon
    2 eggs
    1 c. Amish batter
    1/2 t. baking soda
    1 t. salt
    Beat well on low speed for 2 minutes. Fold in by hand:1 c. chopped nuts; 3 c. diced fresh apples . Pour into 2 well greased loaf pans. Bake at 375 ºF 50-60 minutes.

    CINNAMON ROLLS
    2 c. flour
    1 c. milk
    1 c. Amish batter
    Combine and let set at room temperature overnight or 10-12 hours. Stir down.
    Combine: 1 egg ; 3 t. sugar ; 1/2 c. shortening ; 1 t. salt 1/2 t. baking soda 1 t. baking powder . Add small bowl all at once to stir down. Pour dough out on well floured board and knead until no longer sticky. Roll out to 1/2" thickness in a rectangle shape. Brush dough with soft butter. Combine: 1/4 c. sugar, 1 Tbl. cinnamon and 1/2 c. crushed nuts. Sprinkle cinnamon-sugar mixture over buttered dough. Beginning at wide side, roll up, and seal seam. Cut 1" slices and place on well greased cookie sheet. Let rise 30 minutes. Bake at 350 ºF 30-35 minutes.

    PANCAKES
    1 c. flour
    1/2 t. salt
    1 t. baking powder
    1 t. baking soda
    2 t. sugar
    Combine above in large bowl.
    ADD:
    2 T. oil
    2 c. Amish batter
    1/2 c. milk
    1 egg
    Add small bowl to large and mix on medium speed. Spoon batter on greased griddle.
    WAFFLES: Prepare batter for pancakes except INCREASE oil to 1/4 c.

    COOKIES
    Combine 1 1/2 c. applesauce + 3 tsp. baking soda in small bowl; set aside. Cream together: 3/4 c. brown sugar, 3/4 c. sugar, 1 t. vanilla, and 1 c. shortening. Add: 1 c. Amish batter ; 1 egg. Beat 2 minutes on medium speed. Add applesauce mix alternately with : 4 1/2 c. flour and 1 t. baking powder. Mix until well blended. Fold in 2 c. (12 oz.) chocolate chips. Drop on cookie sheet. Bake at 350 ºF 8-10 minutes.

    CORNBREAD :
    1 c. Amish batter
    2 eggs
    1 1/2 c. milk
    2 t. sugar
    1/2 c. flour
    1 1/2 c. cornmeal
    Combine all above in large bowl and beat at medium speed 2 minutes. Add in 1/4 c. oil, 3/4 tsp. baking soda, 1/2 t. salt, and 1 t. baking powder. Mix well and pour in well greased 9" pan. Bake at 425 ºF 25-30 minutes.

    MUFFINS
    1/2 c. flour
    1/2 c. brown sugar
    1/2 c. whole wheat or bran flour
    1 t. baking soda
    Combine. With spoon make a well (dent) in center of flour mixture. In the well add 1/2 c. milk, a slightly beaten egg, 1/2 cup of oil, 1 cup of Amish batter, and 2 tbl. undiluted orange juice. Stir with fork until mixture is well moistened. Do not over-mix, batter will be lumpy. Spoon in well greased muffin cups. Bake at 375 ºF 30-35 minutes. Allow to cool in pan 5 minutes before removing.

    AMISH FRIENDSHIP CAKE
    2 c. friendship starter
    2/3 c. vegetable oil
    1 c. sugar
    3 eggs
    2 c. all-purpose flour
    1/2 tsp. baking soda
    2 tsp. baking powder
    1 tsp. cinnamon
    1/2 tsp. salt
    4 sm. apples, peeled and sliced

    STREUSEL TOPPING:
    1/2 c. (1 stick melted margarine
    1/2 c. brown sugar
    1/2 c. sugar
    1/2 c. oatmeal
    1/2 c. chopped nuts
    1 tsp. cinnamon
    Mix starter, oil, sugar, eggs, flour, baking soda, baking powder, cinnamon and salt. Mix until smooth. Pour half of batter in a well-greased 9x13" pan. Cover batter in pan with apple slices. Crumble half of the Streusel topping over the apples.Add rest of batter and top with remaining streusel topping. Bake at 350 ºF 45-60 minutes. Mix well.
