Apple: Apple Carrot Cinnamon Bread

List of Ingredients
1 egg
1/2 cup buttermilk
1/3 cup oil
2 cups flour
1 cup brown sugar, sifted
1 tablespoon baking powder
2 teaspoons cinnamon
1 small apple, peel, core and grate
3/4 cup grated carrots
1/3 cup chopped walnuts
BUTTERMILK GLAZE:
1 tablespoon buttermilk
1/2 teaspoon vanilla
1/2 cup sifted powdered sugar
Recipe
Preheat oven to 350ºF. Lightly grease a 9x5 inch loaf pan. Beat together egg, buttermilk and oil until blended. Beat in dry ingredients until blended. Stir in apple, carrot and nuts. Place batter into a greased loaf pan. Bake in a 350 ºF oven for about 1 hour or until a cake tester, inserted in center, comes out clean. Allow to cool for 10 minutes and then remove from the pan and continue cooling on a rack. Combine glaze ingredients and drizzle on top of bread once cool. Yields 1 loaf.
