Apple: Apple Tofu Nut Bread

2 cups flour
1 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground mace
1 cup brown sugar
1 cup sugar
2/3 cup oil
3/4 cup unsweetened applesauce
2/3 cup mashed tofu
3 cups peeled diced Granny Smith apples
2/3 cup chopped walnuts
Recipe
Preheat oven to 350ºF. Spray two 9x5 inch loaf pans with cooking spray. In a small bowl, stir together flours, baking powder, salt, cinnamon and mace; set aside. In a large bowl, beat together brown sugar, sugar, oil, applesauce and tofu with an electric mixer until smooth. Add flour mixture and beat until combined. Stir in apples and walnuts. Pour batter into prepared pans and bake for 1 hour or until a toothpick inserted in center of loaf comes out clean. Cool in pan for 10 minutes, then turn out onto wire racks to finish cooling. Cut into slices.
