Apple: Apple Walnut Bread

2 cups grated packed tart apples
2 tablespoons lemon juice
1/2 teaspoon grated lemon zest
1/4 cup brown sugar
1/4 cup honey
2 tablespoons butter -- melted
2 tablespoons nonfat dry milk
1 egg
2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/4 teaspoons ground cinnamon
1/4 teaspoon salt
1/3 cup chopped walnuts
Recipe
Preheat oven to 350ºF; spray loaf pan with cooking spray. In medium bowl, combine apples, lemon juice and zest. Stir to mix well. In large bowl, whisk together sugar, honey, butter, milk and egg. Stir in apple mix. In another bowl, sift together dry ingredients. Pour apple mix into dry ingredients and fold together; fold in walnuts. Pour into pan and bake approximately 1 hour. If it begins to over-brown during cooking, cover top with foil. Cool 10 minutes. Store in airtight container in freezer up to 3 months.
