    Banana: Banana Oatmeal Pecan Bread

    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup rolled oats
    2 cups whole wheat flour
    1/2 cup butter or margarine, softened
    1/4 cup honey
    2 eggs
    3 bananas, mashed
    1/4 cup buttermilk
    1 teaspoon vanilla extract
    1 cup chopped pecans

    In a medium bowl, combine baking powder, baking soda, salt, oats, and flour; mix well.  Set aside. Preheat oven to 350°F.  Spray a 9x5-inch loaf pan with non-stick vegetable spray. In a large mixing bowl cream butter and honey until light and fluffy.  Add eggs, one at a time, beating well after each addition.  Stir in bananas, buttermilk, and vanilla.  Add flour mixture, stirring until just moistened.  Stir in pecans.  Pour into prepared loaf pan. Bake for 55 minutes or until a tester inserted in the center comes out clean.  Cool in loaf pan for 5 minutes.  Remove from loaf pan; cool completely on a wire rack.
